December 17th, the perfect excuse to start your day with pancakes, waffles or french toast smothered in maple syrup as you celebrate National Maple Syrup Day.

Did you know?

  • Maple syrup was first enjoyed by the indigenous peoples of North America.  The taste and practice for it was then adopted by the European settlers.
  • A maple syrup production farm is called a Sugarbush or a Sugarwood.
  • Sap is boiled in a sugar house which is also known as a sugar shack, sugar shanty or a cabane à sucre.

Where does Maple Syrup come from?

Maple Tree being tapped[/caption] In cold climates maple trees store starch in their trunks and in their roots. In the spring, the starch is then converted to sugar that rises in the sap. The maple trees are then tapped by boring holes into their trunks and the released sap is collected. After the sap is collected, it is processed by heating to evaporate much of the water, leaving the concentrated syrup. While the maple syrup that we all know today is almost always manufactured in Canada, the United States has its own maple syrup production area in Vermont to keep up with the product demand. Skip ahead to the future and you have the Canadian province of Quebec, which is by far the largest producer of maple syrup, contributing to more than seventy five percent of the world’s output.
